The family was living at 41 St. George's Street previously where Edwins shop is. In the 1890's they were living at DORSET LODGE in Ethelbert Road

Edwin's parents were of Tonford Farm in Thanington his father Henry was a farmer of 200 acres, his mothers name was Sarah. Brothers - Herbert, Jarvis, John, and sisters, Helen and Julia.

In 1886, Helen BING married Stanley Ash COLLARD

Edwin apprenticed under his uncle John Knight (Orvidge & Knight) in Holy Trinity, Cambridge. He married Sarah Ann Wallis in 1860 in Cambridge.

Medical Times, May 17, 1881 (vol 1) - BING'S SOLUBLE ESSENCES OF GINGER AND LEMON - Messrs. Bing & Son, of Canterbury, have sent us samples of their soluble essences of ginger and lemon, which are largely used by them in the preparation of effervescent drinks. The essence of ginger is a clear bright preparation, with the true ginger aroma, and has been certified by competent analysts to be prepared from ginger of good quality, and to be free from any adulteration with capsicum or other deleterious principles. It contains mere traces of resinous matter, and is in consequence very soluable in water charged with carbonic acid gas. The beverages prepared by Messrs. Bing from these essences are, as might be expected from the results of the analyses, clean-tasting and palatable.
